Ingredients of Mango Pickle –

* 2 ½ kg mangoes, cut into pieces

*150 grams of fenugreek seeds

*50 grams of red chili powder (coarsely crushed)

*60 grams of fennel seeds

*100 grams of fennel

*50 grams of black mustard seeds

*50 grams of yellow mustard seeds

* 2 teaspoons black peppercorns

*50 grams of turmeric powder

*200 grams of salt

*100 grams of black salt

* 2 tsp coriander powder

*2 tsp cumin powder

* 1 1/2 liters mustard oil

Method for making mango pickles-

1. Wash all the mangoes thoroughly and dry their water. Then wipe the mangoes with a clean cloth.

2. After drying the mango water, cut all the mangoes carefully. Cut a mango into 8 pieces, because small pieces of pickle are good to eat and the masala also gets coated well on small pieces.

3. Now after cutting all the mangoes, turn the mango pieces in a clean utensil and mix turmeric, 100 grams of salt, and fenugreek seeds, mix well in that utensil to marinate the chopped mangoes and keep it covered for 2 days.

4. Carefully stir the mangoes in between. You must have seen that the dried fenugreek that we put in the mango has swelled well because fenugreek swells well in the water that comes out of the mango.

5. Remove whatever extra water is left in the mango with the help of a sieve. Keep mango and fenugreek spread in the air for half an hour.

To make pickle masala

1. To make pickle masala, dry all the spices except the fennel seeds in the sun for 1 hour or heat the spices on low flame for 1 minute. Do not burn the spices.

2. Cool the spices slightly and grind them coarsely on a grater or grinder.

3. For making a pickle, take a big and dry, clean dish and put mango pieces and puffed fenugreek in the dish. After that, mix all the coarsely ground spices and the rest of the spices and fennel seeds well in the mango and fenugreek leaves.

4. Add mustard oil to the mango pickle mixed with spices. If you want, you can add more oil, but in this way, there is no need for much oil in the pickle.

5. You can mix mustard oil by heating it well and cooling it, but I use only raw oil for making pickles, which smells very good.

6. After mixing all the spices, oil, and mango well, fill the pickle in a well-dry and clean glass jar. Your pickle is ready.

*Always use a clean and dry spoon to take out the pickle.

*Always use good and unblemished mangoes for making pickles. Make pickles immediately after buying mangoes and before pickling, wash mangoes thoroughly with cold water and wipe them with a cotton cloth.

*Always use fresh spices while making pickles. Do not use herbs that are more than one year old in pickles. Also, use the herbs coarsely.
